Protein Cookie Dough Bites

Who doesn't love a (late night) treat? These bites are great to have on hand at any needed time. They preserve perfectly in the freezer, plus, who doesn't love cookie dough, another plus, it's low calorie, and high in protein! With just less than 150 calories but 9 grams of protein it makes very filling. Did I mention that they're massive?

Cookie dough bites

Have I been in the US too long or has cookie dough always been so good! Either way, no one can resist a bite of the dough before the cookies go in the oven. So why not make it better for you, without the risk getting salmonella. There isn't much to the instructions, basically mix it all in a bowl and you can eat it straight up. But since this is a cooking website I'll do my best to write thought out instructions ;)

Ingredients:

  • 1.5 scoops truvani chocolate-peanut butter protein powder

  • 1/2 cup almond flour

  • 1/3 cup pb fit

  • 1.5 cup non-fat Greek yogurt

  • 1 tbs maple syrup

  • 1/2 cup chocolate chips

  • 1 teaspoon vanilla powder (or extract)

  • Splash of if necessary

  • Pinch of salt

Instructions:

  1. Start by combining all the dry ingredients, the protein powder, pb fit, almond flour, salt, vanilla powder, and half of the chocolate chips a bowl. In another bowl, mix the Greek yogurt and maple syrup.

  2. Next, combine the two mixtures. Once everything is mixed, use your hands to form small balls, about the size of a golfball. Place them on a baking sheet lined with parchment paper or you could use cupcake holders.

  3. Once all the bites are formed, pop them into the freezer for about 20 minutes. While the cookie bites are cooling start on melting the remaining chocolate.

  4. Place the chocolate chips in a microwavable dish. Microwave the chocolate 30 sec at a time until smooth and shiny.

  5. Take the cookie bites out the freezer and dip the top half one by one in the melted chocolate.

  6. Pop them back in the freezer to store up to 3 months in a ziplock bag or enjoy within a week in the fridge.

  7. Eet Smakelijk!
