Quick, High Protein, Pear and Gorgonzola Salad

Blue cheese, you either love it or hate it. I'm a huge fan, but if you're not part of the club you can easily choose goat cheese, vegan cashew ''cheese'' or another soft cheese to your liking. I love combining salty and sweet flavors! I used Daring Chick'n for my protein source to save some time and still make it super high in protein. I am in my sweet potato era right now, since they're in season and so flavorful I like to add them to any dish I can. Sweet potato is a great carbohydrate, it keeps you full, has amazing fiber and goes well with almost any recipe! This salad is a showstopper, best thing about.. It takes only 20 min to make! Ready to make your co-workers, guests to your party or just a random bystander extremely jealous? This salad is it!

Rich flavors for fall (or whatever)

Making this salad in the middle of summer is kind of funny and ironic, because who cares that these are actual ''winter'' flavors. Last time I checked I got free will, so hopping over to the local supermarket finding the best pears I could find, was the best idea ever. I sautéed the pears to bring out the sweetness, seasoned the sweet potatoes with my secret fries seasoning, a voila! A salad to go back to in any season.

Ingredients

  • 3 cups baby spring lettuce (or your favorite lettuce mix)

  • 1 cup shredded Romain lettuce

  • 1/2 thinly red onion

  • 60g Gorgonzola (or any soft cheese)

  • 1 large red pear

  • 240g Daring Chick'n

  • 1 medium sweet potato

  • 1 tsp smoked paprika, turmeric, garlic, onion, smoked chili powder (adjust chili per liking)

  • 1 tsp salt, 1/2 tsp black pepper

  • 1/2 tbsp olive oil

Dressing

  • 1/2 tbsp EVOO (olive oil)

  • 1 minced garlic glove

  • 1/2 tbsp raw unfiltered honey

  • 1 tsp Dijon mustard

  • 1 tbsp apple cider vinegar

  • salt, and pepper to taste

Instructions

  1. Pre-heat air-fryer at 375F. Chop the sweet in thumb size chunks and season with olive oil and all the spices. Bake for 15-18 min until golden brown. Make sure to give it a shake every 3-5 min. (No air-fryer? Use a skillet instead.)

  2. In a frying pan, sauté Daring Chick'n on medium heat until golden brown on each side. Remove from pan and set aside. (Daring Chick'n already contains some oil so I didn't add any extra to my pan)

  3. Slice the pear in 1/2 inch parts. Then in then in the same frying pan add the sliced pear and turn the heat to low. Let the pear caramelize for 3 min on each side.

  4. In a small mixing bowl, add the EVOO, minced garlic, honey, mustard, apple cider vinegar and salt and pepper. Give it a good stir to make sure all flavors are well incorporated.

  5. Let's assemble! In a large salad bowl, add your lettuce, sliced onion and gorgonzola. Pour the salad dressing and give it a mix. Then add the sweet potatoes and Daring Chick'n, and gently top with the caramelized pear.

  6. And you're done. Eet smakelijk!

Pro tip: Leave salad dressing and double the recipe to take it to go the next day. The dressing can make the lettuce soggy. The rest of the salad toppings are perfectly fine even the next day.

This vibrant salad is not only visually appealing but also packed with nutrients. The fiber from the sweet potatoes and pear promotes a healthy digestive system. I'm also a big fan of protein stacking, gorgonzola and Daring chick'n together add a big fat 27g protein to this salad. I am always looking for a way to eat large portions (volume) that are filled with everything good for you. It's all about feeling fueled after a meal.
