Tofu Bahn Mi
This can hardly be called a bahn mi, but it was the closest representation of the dish, so here we go! The recipe evolved last summer when I was still super strict in my calorie deficit. I wasn't allowing myself to get take out much, but would get home late and needed something quick to fuel me. Little did I know it was going to be a lunch staple I would go back to over and over again! It's done in 15 min, mess free and super delicious. Did I mention the macros on this? Over 30 grams of protein, and 410 calories. That's pretty darn good if you ask me!

Bahn Mi?
Uhm yeah.. Not really. Not at all actually, I can hear the scuff of a traditional chef as I'm typing this. Is it delicious? Yes.. Is it filling? Yes! Is it a bahn mi? NOPE. But we're going with it, because I have no idea what else to name this wrap. The creaminess of the cottage cheese marries so well with the flavorful tofu. And you always need something sour on any dish. Pickles are a staple at my house, I always have them on hand. You can either get them store/farmers market bought. Or make them yourself. (Find the recipe on my website) I was inspired by Myfitgreenmind and made the recipe my own (thank you for being so inspiring) I used low carb tortilla for mss carbs and more fiber, but if you're not a fan please sub for a sub ;) You can use a sub sandwich, regular tortilla, crusty baguette.. You name it. I love this 15 min lunch and go back to it time after time, hopefully you will too!

Ingredients:
1 block of firm tofu, crumbled
1 tbs avocado oil
2 low-carb tortillas
2 tbs hoisin sauce
2 tbs liquid amino
2 tbs sambal (or to taste)
1 tsp garlic powder
1 tsp onion powder
0.5 tsp chili flakes (or to taste)
1 cup cottage cheese
1 cup pickled veggies
Fresh cilantro and sliced jalapeños for garnish
Salt and pepper to taste
Instructions:
I prefer to have a tofu in the fridge, pressing at all times, but if you're not prepared don't worry I've made it before without pressing the tofu for hours. The old school 10 min pressed in a towel by books works just fine! While the tofu is pressing, heat up your frying pan on medium to low heat, then add tablespoon of oil.
Once the tofu is pressed, crumble it into tiny pieces. In a mixing bowl, combine the hoisin sauce, soy sauce, sambal, garlic powder, onion powder and optional chili flakes. No need to marinade, once your oil is hot in the pan it's ready to go.
Add the tofu to the pan, try not touching it for 3-4 min so the tofu and hoisin sauce can cramalize. Then stir, and again let the tofu char on the other pieces too.
While the tofu is cooking, warm the tortillas in another skillet or toaster oven. Assemble your ''Bahn Mi'' by placing the crispy tofu on the warmed tortillas.
Top with a generous scoop of cottage cheese, followed by the pickled vegetables of your choice, fresh cilantro, and jalapeños. Mine is always so full that it never rolls up, the tortilla is purely used for holding the ingredients together. But if you're not messy like me, then roll it up, and you’ve got yourself a lunch!
