Overnight Apple Pie Oats
Apple pie is such a Dutch staple. Realtors in Holland tell their client to bake an apple pie before showings. Why? Because the smell instantly feels homey, warm and comforting. And so is this breakfast, I love the smell of apple pie, maybe because is smells like home, but there is something about the sweetness of apple and cinnamon. In my opinion the star of the show is the oat/almond butter crumble on top. There are multiple layers in this small but mighty jar of goodness. Trust me when I say you're in for a treat. For added protein I chose Fair Life 2% milk, however you can easily substitute for a plant based alternative, like soy milk and some vanilla protein powder.

A daily dose of ''apple pie''
Apple pie should not just be for winter and fall days, because these oats are refrigerated they're actually super refreshing and easily enjoyed in the summer as well. These overnight oats are a serious treat, reminiscent of warm apple pie baking in the oven. Each time I prepare this dish, my home fills with the warm, sweet aroma of spiced apples and cinnamon. Not only is this recipe delicious, but it’s also wholesome and guilt-free, without any refined sugars!

Time: 10 min, then overnight
Ingredients
½ cup + two tbsp rolled oats
1 cup fair life milk (or your milk of choice)
1 + 1/2 tablespoon almond butter
1/2 tbsp chia seeds
1/2 tbsp flax seeds
1/2 tsp vanilla powder (or essence)
1/2 tbsp honey or maple syrup
1 apple, diced (my preference is honey crisp)
1 tbsp cinnamon
Flaky sea salt for garnish
Instructions
Start by toasting 2 tbsp rolled oats in a dry pan on low to medium heat for 2-3 min. Flip the oats over every once in awhile and don't let them burn or toast past golden brown. Take the pan off the heat and mix in 1/2 tbsp almond butter and some flaky salt.
Meanwhile dice the apple into bite size pieces. In a small bowl, toss the diced apples with cinnamon, half tbsp cinnamon, and some flaky salt. Then add it to a small pan over medium heat, cook for 3 min until water is evaporated, once the water is gone continue on toasting the apple until al dente (you should see some light caramelization) Turn off the heat and set aside.
Then the easy part, mix in a mason jar, or small container all the dry ingredients: oats, chia seeds, flaxseeds, remaining half tbsp cinnamon, and some flaky salt.
Then add stir in the wet ingredients: milk, sweetener of choice and 1 tbsp almond butter. Top the oats with the cooked apples and lastly the oat crumble.
Cover and refrigerate overnight. Eet smakelijk!

Optional Add Ons:
Add 150g of Greek yogurt to your finished bowl for higher protein. Half the quantity of oats and milk for a lower calorie/carb breakfast (still very satisfying). Sub almond butter for almond powder for less calorie, and fat.
